Easy Side Dishes

At dinner time I usually eat a lean protein with brown rice and salad. However on the weekends I like to have a little more fun. Side dishes can end up being a meal in themselves so make sure to watch your portion sizes. Enjoy!

Chipotle Tarragon Marinated Portobellinni's
(Gluten, Dairy and Soy Free)

Ingredients
  • 12 oz Baby Portobello Mushrooms, stems removed
  • 1/3 cup Tarragon Vinegar, Red Wine
  • 4 cloves Garlic Clove, minced
  • 1/3 cup Extra Virgin Olive Oil
  • 1 peppers w Chipotle Pepper In Adobo Sauce, chopped
  • 1 tbsp Brown Sugar
  • 1 tbsp Oregano, Dried
  • 1 tbsp Basil (dried)


Mix Red Wine Vinegar, Garlic, Olive Oil, Chipotles, Brown Sugar, Oregano and Basil in a Large Mixing bowl; and whisk together to combine all ingredients.  Cover mushrooms with the marinade and refrigerate 1-8 hours. Pour mixture into a large stove stop frying pan and cook over medium heat. Serve with fresh parsley.


Serves 4 (about two mushrooms each) and takes about 5 minutes to make the marinade and 5 minutes to cook.


Calories per 2 mushrooms (1/4 of the recipe): 234 Calories, 18.82g Fat, 12.1 Carbs, 1.9g Fiber, 3.1g Protein.
Weight Watchers Points: 5

Remember that unless you consume ALL of the marinade the actual calories/fat content will actually be less.  If you want to reduce the overall calories and fat in this recipe, simply reduce the vinegar and olive oil amounts by half (about 2Tbsp each). Your new calorie counts per two mushrooms would be: 117 Calories, 7.2g Fat, 12.1g Carbs, 1.9g Fiber, and 3.1g Protein. Weight Watchers Points: 3


Walnut and Goat Cheese Stuffed Potatoes (Gluten, Dairy and Soy Free)

Ingredients

4 average sized potatoes (about 5 oz. each)
3 tbsp Walnuts Chopped
3 tbsp Goat Cheese
2 tbsp Chives, Freeze-dried
1 tbsp Thyme, Dried
Salt and Pepper to Taste




Bake potatoes in oven for 1 hour at 400degrees.
While potatoes are cooking combine chopped walnuts, goat cheese, chives and thyme.
When potatoes are ready remove from oven and let cool for 15 minutes. Cut out some of the potato flesh from each potato and fill equally with goat cheese mix.
Salt and Pepper to taste.

Serves 4 and takes 5 minutes to prep and 60minutes to bake.

Calories per potato: 208 Calories, 8.75g Fat, 28g Carbs, 3.1g Fiber, 4g Protein.
Weight Watchers Points: 4

Lemon and Garlic Grilled Asparagus

Ingredients
1 lb Green Asparagus
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic Clove
1 tsp Lemon Zest
1/2 tsp Paprika

In a small bowl mix together the oil, garlic, lemon zest, and paprika. Lay the asparagus in a shallow plate and drizzle mixture over top of the asparagus. BBQ until desired tenderness. Season with Salt and Pepper.

Serves 4 and takes about 15 minutes to make.
