I bought about 10 new cookbooks when I decided to become gluten and dairy free and through this I accidentally turned myself into a vegan for almost 3 months. I didn't even notice that I hadn't had meat in those 3 months as the recipes I had been making were so good and filling. I had whole cookbooks where everything was just veggies, vinegars, oils and spices. I am not a vegan and have definitely added meat back into my diet but I do still love experimenting with vegetables. For anyone Vegan - these are for you!

Lemon and Garlic Grilled Asparagus

Ingredients
1 lb Green Asparagus
1 tbsp Extra Virgin Olive Oil
2 cloves Garlic Clove
1 tsp Lemon Zest
1/2 tsp Paprika

In a small bowl mix together the oil, garlic, lemon zest, and paprika. Lay the asparagus in a shallow plate and drizzle mixture over top of the asparagus. BBQ until desired tenderness. Season with Salt and Pepper.


Serves 4 and takes about 15 minutes to make.
